ONE OFF
Our plans for Bell Cros to grow as a wine producer involve trying different wines and styles. We release limited editions of the wines that we like and believe in. The wines might be made of grapes we normally don’t use, alternative methods of vinification, using grapes from new areas etc. We decided to call this special line “ONE OFF”, something you only do once. If it is well received, we may make it again or include it in our regular Bell Cros range.
ONE OFF #6
The grapes for this sweet dessert wine (140 g/l) were picked late in the season once they had become overripe. After they were harvested, the grapes were spread out on panels to dry for 35 days. The aromatic, raisined grapes were vinified and left to macerate on their skins for 20 days, after which the wine was aged in large, 220 L, glass demijohns and steel tanks for 12 months. Serve at 12-16°C. Ideal to pair with blue cheeses and chocolate desserts.

TASTING NOTES | Cherry red color with carmine and garnet tones. On the nose, aromas of figs, dates and ripe red fruits and citrus peel. On the palate, the wine is fresh and sweet with an oily texture. |
SERVING SUGGESTIONS | In general, it’s best served with sweet and savory foods. Heavy, rich, and dark chocolate cake or fruit-based desserts, such as caramelized and nutty fruit pies or fruit tarts. ONE OFF #5
Claret wine is rather rare these days and its origins trace back to the Middle Ages. Claret is almost pink and the name is used to describe very light/clear red wines from Bordeaux. The word “claret” comes from the Latin word clarus “clear”, meaning clear. # 5 is made of equal quantities of white and red grapes (Garnacha), which are mixed, fermented and macerated together.

ONE OFF #4
The owner of Bell Cros, Peter, and the daughter Ida they love bubbles. Now finally Bell Cros first bubble is ready. It is made of 100% Garnacha Blanca grapes and according to the original Ancestral-method. The wine was bottled before the fermentation was finished and then it continued to ferment, converting the remaining sugar to carbon dioxide as a result. After that, it has spent 12 months on the lees.

TASTING NOTES | A beautiful and bright golden color. In some bottles the wine is not entirely clear as the Ancestral manufacturing method is manual. The bubbles enhance the citrus and anise fragrance with a light touch of pastries. On the palate the wine has volume, it’s lively and refreshing, thanks to the subtle carbonic. |

ONE OFF #3
#3 is a Brisat (orange) wine and the third wine in the “ONE OFF” range. Made exclusively from Garnacha Blanca grapes which ferment with their skins for 29 days. The wine is then left to age for four months in a 700-litre egg-shaped granite vessel. This brings out the wine’s rounded flavour and enhances its elegance and complexity.
